The wording of the rules assumes the scoring of an incomplete monastery or garden. However, there is no explicit limitation in the rules to prevent the active player from removing their abbot from a feature just completed.  
You can only score the abbot placed on a monastery or garden before the feature is completely surrounded by tiles, that is, when the feature is incomplete. In this case, you always score the abbot (on the feature), never the feature itself. (11/2020)
